Salmon Souffle

1 cup milk

2 tablespoons flour

1 tablespoon butter

salt

pepper

lemon juice

cooked salmon (I assume smoked salmon?)

3 eggs

Make a sauce by melting butter and gradually adding flour, then milk and salt and pepper. Add salmon to white sauce. Add 2 beaten egg yolks and stiffly beaten egg whites. Pour into a greased dish, sprinkle breadcrumbs on top. Bake is a slow oven for 45 minutes.
