3.3 lbs/1.5 kilograms ribs of mutton or 2.2 lbs/ 1 kilogram breast of mutton
2.2 lbs/ 1 kilogram tomatoes (8 medium)
2 medium onions
4 potatoes (sliced)
1 tablespoon butter
1 tablespoon flour
salt and pepper
1 tsp sugar
Remove skins from tomatoes. Brown onions in hot fat in heavy saucepan. Add meat and 1 cup hot water. Cover and stew for 2 hours or until tender. After 1 hour, add tomatoes, potatoes, peppercorns, sugar, salt and pepper.
Thicken with melted butter and flour. Serve over rice.
